    Fruit for this vintage was selected from sites in Bendigo, Pisa, Gibbston & Bannockburn; each site selection playing a specific role in the final blend. The aim being to make the quintessential Central Otago Pinot Noir.
    This wine was fermented in a number of small batches, all relating to vineyard site and aspect, using indigenous vineyard yeasts. The wine was then left to
    macerate on skins for up to 3 months before pressing, settling and racking to barrels. The wine was blended
    into tank and gently settled for bottling without fining or filtration in the spring of the following year



    Not a wine that can be made each year in Central Otago. The result of exceptional weather conditions, the fruit had 85% perfectly formed noble botrytis. From an ideal site in Bendigo. The fruit was destemmed and soaked for a week in bins. Pressed off, settled and racked into barrels. A native fermentation took it to a point where it stopped in perfect balance. The wine was blended and filtered before bottling. It retains a high level of natural CO2 to preserve freshness in the mouth
